The [b]Colline Pontine[/b] Protected Designation of Origin extra virgin olive oil received European recognition in 2010.
Its production takes place in an area with a long olive-growing tradition, where cultivation of the precious tree received a huge boost starting in the 18th century, when the Papal States established a prize for the creation of new plantings.

[b]Production area[/b]: the production area of Colline Pontine PDO oil covers all or part of the administrative territory of the following municipalities in the province of Latina: Aprilia, Bassiano, Campodimele, Castelforte, Cisterna di Latina, Cori, Fondi, Formia, Itri, Lenola, Maenza, Minturno, Monte San Biagio, Norma, Priverno, Prossedi, Roccagorga, Rocca Massima, Roccasecca dei Volsci, Santi Cosma e Damiano, Sermoneta, Sezze, Sonnino, Spigno Saturnia, Terracina.
[b]Cultivars[/b]: the “Colline Pontine” protected designation of origin must be obtained from groves with the following olive varieties: Itrana from 50% to 100%, Frantoio and Leccino up to 50%. Other olive varieties may also be present, up to a maximum of 10%, provided they do not alter the product’s characteristics.
[b]Organoleptic profile[/b]:
[b]colour[/b]: from intense green to yellow with golden reflections;
[b]smell[/b]: medium to intense fruity aroma of green olive, with an almond aftertaste and a characteristic fresh herbaceous note; a typical hint is (green) tomato.
[b]taste[/b]: light to medium bitter and pungent.

Colline Pontine PDO is the ideal dressing for many typical dishes of Pontine cuisine such as [i]bazzoffia[/i], a soup made with vegetables, pulses, eggs and cheese.
