Oil is a food that deteriorates over time, which is why it is important to store it in stainless steel tanks saturated with inert gases such as nitrogen, kept in air-conditioned storage rooms. The factors that affect its preservation and need to be kept under control are:

– [b]light[/b] | the oil must be stored in the dark to avoid photo-oxidation processes that cause the “rancidity” defect;
– [b]oxygen[/b] | contact with air develops oxidative reactions in the oil, which change its chemical composition and radically alter its colour, smell and taste.
