On June 5, 2015 from 10:00 to 12:00 some technicians of OP LATIUM will be available in Castle Savelli of Palombara Sabina (Rm) to provide visitors with the basic cognitive tools to recognize and consciously choose a quality oil .
The main steps of the process of production of extra virgin olive oil, its particular physical-chemical and sensory characteristics and the current classification of olive oils will be explained.
The theoretical introduction will be a guide for te following practice session of tasting aimed at providing the necessary elements to adequately perform an oil sensory analysis. In this way, participants will experience and recognize directly and personally the most significant differences and the organoleptic quality of real extra virgin olive oils compared to commercial lower level oils.
The event will be held concurrently with the 88 th edition of the famous Sagra Delle Cerase of Palombara Sabina.
