About fifty people, all professionals, participated last July 26 in a training session dedicated to the oil mill technicians and bottling operators. The course, organized by OP LATIUM has been conducted by Prof. Maurizio Servili of the University of Perugia, expert in extra virgin olive oil.
Several topics have been illustrated during the short course at the OP LATIUM plant “Colli Sabini” of Palombara Sabina (RM): the quantity and quality of the oil produced in Italy and in the world, the technical characteristics of the main types of machines for olive processing, the opportunities provided by technological innovation about quality improvement, the reduction of costs, the different sensory profiles of the oils produced from the hundreds of varieties of olives grown in our country.
This activity is realized within a campaign funded with contributions from the European Union and Italy Reg.UE 611/14 Activity 3 Action 3D – 2nd year 2016-2017.
