The conservation: the enemies of extra virgin olive oil
Oil is a perishable product, so it is important to keep it in stainless steel tanks saturated with inert gas (like nitrogen) in air-conditioned storage rooms.
The main factors to be monitored in order to preserve its quality are:
- temperature: the oil must be stored at a temperature between 12 ° and 15 ° C;
- light: the oil must be stored in the dark to avoid photo-oxidation processes;
- oxygen: contact with this gas causes oxidative reactions, which alter the color, smell and taste of the oil.
