Consider the <strong>frequent references to olives in recipe books<\/strong> and in the advice of great authors of the past \u2013 to mention one \u2013 the great Roman agriculture expert <strong data-start=\"674\" data-end=\"709\">Lucio Giunio Moderato Columella<\/strong> (1st century AD), who handed down <strong>recipes for preparing crushed and flavoured olives<\/strong> with many ingredients such as grape must, vinegar, fennel seeds and lentisk.<\/p>\n<p data-start=\"898\" data-end=\"1698\"><picture><source type=\"image\/webp\" srcset=\"https:\/\/www.oplatium.it\/wp-content\/uploads\/2025\/02\/varieta-di-olive-da-tavola-1-585x317-1.webp 585w, https:\/\/www.oplatium.it\/wp-content\/uploads\/2025\/02\/varieta-di-olive-da-tavola-1-585x317-1-300x163.webp 300w\" sizes=\"auto, (max-width: 585px) 100vw, 585px\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/www.oplatium.it\/wp-content\/uploads\/2025\/02\/varieta-di-olive-da-tavola-1-585x317-1.webp\" alt=\"\" width=\"585\" height=\"317\" srcset=\"https:\/\/www.oplatium.it\/wp-content\/uploads\/2025\/02\/varieta-di-olive-da-tavola-1-585x317-1.webp 585w, https:\/\/www.oplatium.it\/wp-content\/uploads\/2025\/02\/varieta-di-olive-da-tavola-1-585x317-1-300x163.webp 300w\" sizes=\"auto, (max-width: 585px) 100vw, 585px\"><\/picture><\/p>\n<p data-start=\"898\" data-end=\"1698\">Table use of olives is so important that today <strong>olive varieties<\/strong> can be grouped into two main categories: <strong data-start=\"1043\" data-end=\"1062\">oil varieties<\/strong> and <strong>table varieties<\/strong> (table olives).<br data-start=\"1100\" data-end=\"1103\" \/>To these is added the group of <strong data-start=\"1144\" data-end=\"1176\">dual-purpose varieties<\/strong>, whose fruit, besides being used for oil, can also be <strong>processed and eaten as table olives<\/strong>, especially when the environment and growing techniques allow <strong>a suitable crop for the purpose<\/strong>, i.e. fruit that is <strong>healthy and adequately sized<\/strong>.<br data-start=\"1477\" data-end=\"1480\" \/>Table varieties are characterised by <strong>production of larger fruit<\/strong>, with a <strong>high flesh-to-pit ratio<\/strong> (i.e. plenty of flesh relative to the pit) and <strong>generally low oil content<\/strong>.<\/p>\n<h3>Characteristics of the fruit<\/h3>\n<p data-start=\"1735\" data-end=\"1813\">The olive, the fruit of the olive tree, is called a <strong>drupe<\/strong> and consists of:<\/p>\n<ul data-start=\"1814\" data-end=\"1986\">\n<li data-start=\"1814\" data-end=\"1870\">\n<p data-start=\"1816\" data-end=\"1870\">a thin outer layer, the <strong>skin or epicarp<\/strong>,<\/p>\n<\/li>\n<li data-start=\"1871\" data-end=\"1928\">\n<p data-start=\"1873\" data-end=\"1928\">a fleshy central part, the <strong>flesh or mesocarp<\/strong>,<\/p>\n<\/li>\n<li data-start=\"1929\" data-end=\"1986\">\n<p data-start=\"1931\" data-end=\"1986\">and the <strong>stone or endocarp<\/strong>, the hard inner part.<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"1988\" data-end=\"2447\">The olive has an <strong>elongated sub-ovoid<\/strong> shape that varies by <strong>variety (cultivar)<\/strong>. The drupe <strong>colour<\/strong> is initially green and, as it ripens, takes on shades from pink to purple to black, passing through an intermediate phase called <strong>veraison<\/strong>.<br data-start=\"2255\" data-end=\"2258\" \/>Olives have a <strong>high fat content<\/strong>, which increases with ripening, and a <strong>very low carbohydrate content<\/strong>, lower than that of any other edible fruit.<\/p>\n<picture><source type=\"image\/webp\" srcset=\"https:\/\/www.oplatium.it\/wp-content\/uploads\/2025\/02\/20170508173952.webp 600w, https:\/\/www.oplatium.it\/wp-content\/uploads\/2025\/02\/20170508173952-300x196.webp 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/www.oplatium.it\/wp-content\/uploads\/2025\/02\/20170508173952.webp\" alt=\"\" width=\"600\" height=\"391\" srcset=\"https:\/\/www.oplatium.it\/wp-content\/uploads\/2025\/02\/20170508173952.webp 600w, https:\/\/www.oplatium.it\/wp-content\/uploads\/2025\/02\/20170508173952-300x196.webp 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\"><\/picture>\n<h3>Table olives in Lazio<\/h3>\n<p data-start=\"2482\" data-end=\"2796\">Table olives represent <strong data-start=\"2514\" data-end=\"2567\">part of Italy&#8217;s olive history and culture<\/strong> and are <strong>an important production niche<\/strong> in our olive growing. In Lazio, this sector is <strong>growing<\/strong>, both in <strong>production capacity<\/strong> and <strong>processing<\/strong>.<br data-start=\"2754\" data-end=\"2757\" \/>The main varieties in Lazio are:<\/p>\n<ul data-start=\"2797\" data-end=\"2889\">\n<li data-start=\"2797\" data-end=\"2855\">\n<p data-start=\"2799\" data-end=\"2855\"><strong data-start=\"2799\" data-end=\"2809\">Itrana<\/strong>, widespread especially in the province of Latina<\/p>\n<\/li>\n<li data-start=\"2856\" data-end=\"2889\">\n<p data-start=\"2858\" data-end=\"2889\"><strong data-start=\"2858\" data-end=\"2869\">Leccino<\/strong>, common in Sabina<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"2891\" data-end=\"3022\">Both are <strong>dual-purpose<\/strong>, suitable for both <strong>oil production<\/strong> and <strong>processing into table olives<\/strong>.<\/p>\n<h3>Classification and processing of table olives<\/h3>\n<p data-start=\"3083\" data-end=\"3145\">Once processed, table varieties are distinguished by:<\/p>\n<ul data-start=\"3146\" data-end=\"3335\">\n<li data-start=\"3146\" data-end=\"3188\">\n<p data-start=\"3148\" data-end=\"3188\">the <strong>good taste and aroma of the fruit<\/strong>,<\/p>\n<\/li>\n<li data-start=\"3189\" data-end=\"3228\">\n<p data-start=\"3191\" data-end=\"3228\">a <strong>high percentage of flesh<\/strong>,<\/p>\n<\/li>\n<li data-start=\"3229\" data-end=\"3293\">\n<p data-start=\"3231\" data-end=\"3293\"><strong>firm flesh consistency<\/strong> (in green olives),<\/p>\n<\/li>\n<li data-start=\"3294\" data-end=\"3335\">\n<p data-start=\"3296\" data-end=\"3335\">and <strong>not soft in black olives<\/strong>.<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"3337\" data-end=\"3455\">The aim of processing is to <strong data-start=\"3372\" data-end=\"3397\">remove bitterness from olives<\/strong>, making them <strong>ready to eat<\/strong> and <strong data-start=\"3434\" data-end=\"3454\">suitable for keeping<\/strong>.<\/p>\n<p data-start=\"3457\" data-end=\"3514\">Table olives are classified into four types:<\/p>\n<ul data-start=\"3515\" data-end=\"3976\">\n<li data-start=\"3515\" data-end=\"3608\">\n<p data-start=\"3517\" data-end=\"3608\"><strong>Green olives<\/strong>: fruit picked <strong>while still green<\/strong>, colour from green to straw yellow.<\/p>\n<\/li>\n<li data-start=\"3609\" data-end=\"3700\">\n<p data-start=\"3611\" data-end=\"3700\"><strong>Turning-colour olives<\/strong>: <strong>pink-wine or brown<\/strong> fruit, picked during <strong>veraison<\/strong>.<\/p>\n<\/li>\n<li data-start=\"3701\" data-end=\"3745\">\n<p data-start=\"3703\" data-end=\"3745\"><strong>Black olives<\/strong>: <strong>very ripe<\/strong> fruit.<\/p>\n<\/li>\n<li data-start=\"3746\" data-end=\"3976\">\n<p data-start=\"3748\" data-end=\"3976\"><strong>Black olives by oxidation<\/strong>: <strong>green fruit darkened<\/strong> by <strong>oxidation<\/strong> and debittered by <strong>alkaline treatment<\/strong>.
