A first level course for aspiring olive oil taster will be held in Rome from september 24 to 29.
The course is authorized by the Lazio Region, it lasts 40 hours and it is leaded by a Panel Leader. Classes are in Italian language.
The course is developed in accordance with Regulation (EC) No. 2568 and further amendments and integrations and with Decree Mi.P.A.A.F. of June, 18th 2014.
The course is composed of theory lectures and practical training.

Main topics:
- Sensory analysis.
- IOC method for the organoleptic evaluation of virgin olive oils.
- Chemical-physical and organoleptic characteristics of vigin olive oils.
- Olive growing and oil extraction techniques and their effects on the quality of olive oils.
- Influence of technology on the quality of olive oils.
- The legislation in the olive sector.
- World production and consumptions.
- Control methodologies standardization.
- Tasting sessions and selective trials.

Four selective trials constitutes integral part of the course. Participants who pass the trials, receive the Certificate of Physiological Eligibility for Tasting.
